Chocolate Chip Pumpkin Bread

A friend at worked shared this recipe with me and boy am I glad she did!  It is super simple to make and soo tasty.  I used 6 mini loaf pans and it was the perfect amount.

Ingredients

  • 3 cups white sugar
  • 1 (15 ounce) can pumpkin puree
  • 1 cup vegetable oil
  • 2/3 cup water
  • 4 eggs
  • 3 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground nutmeg
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 1/4 cup miniature semisweet chocolate chips

Directions

  1. Preheat oven to 350 degrees. Grease and flour 6 mini loaf pans.
  2. In a large bowl, combine sugar, pumpkin, oil, water, and eggs. Beat until smooth. Blend in flour, cinnamon, nutmeg, baking soda, and salt. Fold in chocolate chips. Fill pans 3/4 full.
  3. Bake for 45 minutes, or until an inserted knife comes out clean. Cool on wire racks before removing from pans.

Craft time

This weekend I decided that while Trevor was away hunting I was going to get some crafting done.  And ta-da I did!  Bridgette, the boys, Mom and I went down to BSU on Saturday and gathered up hundreds of acorns.   I baked them all last night to kill any critters hiding inside and painted the styrofoam circles brown to hide any cracks the acorns didn’t cover.

Today I went over to the Rutz house and we glued the acorns to our wreaths.  After 4 hours and plenty of hot glue gun burns later, my wreath was finished and I love it!   Yay for Fall!

Jax where art thou?

Ok, I am having withdrawls.  Sons of Anarchy is my new bad habit and I am fresh out.  Trevor and I watched Season 1 last weekend and then I slammed through Season 2 while he was away hunting this week.  Then I found the first 3 episodes of Season 3 on Hulu and watched them tonight.  I have a problem, I know, I know. 

But now I have to wait until December for the next episodes to be loaded to Hulu.  I don’t know if I will make it.  Will Jax find Abel?  Will Jemma make it out of the country?  Oh how I need to know. 

In the meantime I guess this photo of Jax aka Charlie Hunnam will have to tid us over.

Caster Family Photos

This weekend we drove out to Weiser to have family photos taken with the Caster clan.  Randi Davies was our wonderful photographer and did a great job with all 9 of us!  Here are a few shots that she sent us.  Can’t wait to see them all!

Fall is here

The air is finally chilling a bit and October is here.  So to celebrate the beginning of Fall, I tagged along with my parents and my sister’s family to Linder Farms.   The place is super cool.  Not only do they have 3 huge corn mazes,  they have tractor rides and bounce houses for the kids, petting zoo (with a joey!), and the most delicious donuts ever.  If you have a chance, take the kiddos (big and small) to check it out!

A new decade

I am now officially an adult.  I turned 30 last week and as scary as it is to think I am now “in my 30s”,  it has been a flat good time.  We spent the weekend at the cabin in McCall and when I woke up on Saturday, I came down to a wonderfully decorated party.  My Mom and sister had made a banner of photos that had snapshots from each year of my life…so thoughtful!  Trev made breakfast and we toasted a new decade with mimosas.

We snacked on all of my favorite treats all day long and then Trev treated me to dinner in town at Rupert’s at Hotel McCall.  Very tasty indeed.

We finished the night off with cake, Blackjack and lots of laughs. I am so lucky to have such a wonderful family to celebrate with, love you!
